With the growth in brewing as a hobby has come an increase in the variety, availability, and quality of malt extracts. As anyone who has been brewing for a long time knows, we have progressed far since the days of Blue Ribbon hopped malt extract. There are now more than twenty-five malt extract companies marketing their products in North America. While some are better than others, almost all are much higher quality than they were just a few years ago. Until recently date-stamping was unheard of, and a definite "caveat emptor" situation existed when it came to finding fresh extracts. Higher quality and better quality-control comes with a price tag, however. In an effort to lower the cost to consumers many specialty stores now offer malt extracts in bulk. Caution should be exercised when choosing to purchase malt extracts in bulk. Make sure you know who produced the extract you are buying. It would be wise to purchase an extract made by a company who produces extracts specifically for the brewing industry, as opposed to the baking industry. I can not understate the importance of buying bulk extracts as fresh as possible. Extracts age, and bulk extracts are not packaged in oxygen free environments. Ask the store where you are making the purchase when it was packaged. Preferably purchase from a store which carries the drums themselves and taps it out daily. Canned Malt Syrups

Bulk Malt Extracts, Briess Malt Company (U.S.)

Dry malts are 15-20% more concentrated than syrups. We recommend substituting equal amounts of dry malt for any priming sugar in your recipe. This will enhance the body and character of your beer. For priming you will need to use 1¼ cups of dry extract.
