Alt Bier
We Northwesterners think of rich Pilsners and Octoberfest lagers when we think of Germany. The Alt beers (meaning:old) are a top fermented ale that has been produced for hundreds of years. This beer is commonly associated with the North German towns such as Dusseldorf. Alts are brown to copper in color and assertively hopped. It has a medium body and maltiness. Commercial examples that you may find around here are
Widmer Alt and Alaskan Amber.

HOW DO I INCREASE ALCOHOL PERCENTAGE IN MY BEER?
You can increase the alcohol percentage by increasing the amount of fermentable sugar's you add to your wort. This can be done by adding more malt extract, honey, or invert sugar. Different sugars can have a different effect on the overall beer. If you want to boost your brew, ask us which sugar would be best for your beer.
WHY DO I ADD HOPS AT DIFFERENT TIME PERIODS OF THE BOIL?
The reason is that you get different characteristics from the hops. With 45 to 60 minutes of boiling you extract the alpha acids and get the bitterness in your beer. Hop additions added between 10 to 20 minutes will contribute hop flavor to your beer. Additions of hops within the last 5 minutes to knockout will add to the hop aroma of your beer. The hop schedule you choose depends on the style of the beer and your personal preferences.

The new 'synthetic cork' you have all heard about is now available at Evergreen Brewing. Of course we will still offer the traditional cork but some advantages to know about the synthetic cork may help you decide to try it and make the change. Synthetic corks will not grow mold, they are properly sealed, will not create any musty taste or smell. They will not crack or crumble and remove easily with a traditional corkscrews. These corks are fully recyclable and approved by the FDA.

"Brew Debut" HomeBrew Competition
It's time to rev up the fermenter. The "Brew Debut" homebrewing competition is back and better than ever, with expanded categories and bigger prizes! New to the competition is a category for Ciders and Meads. This year the first round will be held at the Rose Hill Ale House in Kirkland (425-828-9712) on Saturday, June 7th. Entries are due by Thursday, June 5th. The Best-of-Show round will be a public event held on Sunday, June 15th at the Herbfarm Microbrewery Festival. If you've ever thought that you make the best beer/mead/cider around, you now have a forum to prove it !
